Roasted Lemon Garlic Shrimp

If ever there was a 10 minute dinner this is it! Shrimp cooks incredibly fast and broiling it in the oven is one of my favorite ways to make it. It is done in just a few minutes!
This is my healthy version of shrimp scampi. I swapped out the loads of butter for lemon juice and zest and an obscene amount of garlic.
I like to serve this with rice or pasta but it makes a great appetizer as well.
Because we’re all nutty over lemon I put an extra one… or two on the baking sheet for serving with.
This goes really well with Mediterranean Roasted Vegetables. When the vegetables are done just turn the oven to broil and the vegetables will still be hot when the shrimp is done!

Roasted Garlic Rice

I keep a stash of roasted garlic in my freezer, for this dish alone.  I use it for other things too, but I MUST have it on hand to throw this dish together.  It’s one of the first dishes I made for my husband when we were newlywed’s that he adored.    It remains a big favorite of his (and everyone else who has every had it).  It goes really well with so many things, and is so quick and easy. I hope you love it too!
 
ROASTED GARLIC RICE
Recipe by My Stained Apron
 
4 cups cooked rice, cooked in chicken broth instead of water
1/4 cup roasted garlic, mashed
1/2 cup grated Parmesan cheese
1/2 cup fresh parsley, chopped
salt and pepper to taste
 

Cook rice as desired (I usually use my rice cooker) just use chicken broth in place of water.

When cooked, mix everything together, serve warm.

Grilled Garlic Bread

I’m not sure where this recipe came from. A scribble on a scrap of paper.  My idea? From a cookbook? A cooking show? Who knows, but it’s such a wonderful change of pace from the usual thrown on the grill. We love to have it with the grilled romaine I posted earlier this week. 
This could easily be made ahead of time, just throw on the grill right before dinnertime.  Make it this weekend and have a fun BBQ with the family!
 
GRILLED GARLIC BREAD
 
1 loaf Italian Bread
1 1/2 sticks unsalted butter
3 cloves minced garlic
1/4 cup chopped fresh parsley
1/4 cup grated Parmesan cheese
 
Slice bread diagonally in 1 1/2 inch to 2 inch slices.
Mix remaining ingredients together, spread on both sides of bread.
Grill each side of the bread very briefly on a hot grill, be careful of flare-ups from the melting butter.
