Cucumbers totally count as a side dish in my house. This is my favorite way to eat them. You only need 3 things. Cucumbers. Limes. Salt. I usually make this before cooking dinner because the flavor is better after sitting for a short while. I’ve heard of other versions of lime cucumbers where you add a large amount of salt to soften the cucumbers then rinse it off. We really prefer them this way with some crunch still. This is a great cooling side dish for summer BBQ’s or to add to burgers instead of pickles even!
Ingredients
- English or Persian cucumbers
- Lime
- kosher salt
Instructions
- Slice cucumbers about 1/4 inch thick and place in a bowl.
- Zest lime and sprinkle over cucumbers. Sprinkle with salt, squeeze lime over cucumbers and toss to coat.
- The number of limes you need depends on how many cucumbers you use and also how juicy your limes are. You want the cucumbers well coated but they don’t need to be swimming in the lime juice.
- I make this about 20 minutes before mealtime, but you can do it even earlier than that, just store in the fridge. Store leftovers in the fridge in an airtight container.
