Chicken Strips (or Nuggets)

This is using the same coating mix as the Chicken Kiev. This is my favorite way to make homemade chicken strips. We all love it!

CHICKEN STRIPS (OR NUGGETS)
About 1-1 1/2 lbs chicken tenders  (or chicken breasts cut into nuggets)
*Buttermilk for soaking
**coating mix
1 1/2 cups cornflake crumbs
3/4 cup flour
dash salt & pepper
1 tsp Italian seasoning
1 tsp paprika
1 tsp garlic powder

Soak chicken for a couple of hours in buttermilk.*If you don’t have any, add 1 T vinegar to each cup of milk used, let set for about 10 minutes, then use.
After chicken has soaked, roll in coating mix, then place in sprayed 9″ by 13″ pan.  Bake at 400 degrees for about 20-25 minutes or until chicken is cooked through.
If it looks a little dry, you can spray it with PAM or drizzle with melted butter before done baking.
**Sometimes I use an all-purpose garlic seasoning mix, or whatever else I feel like to flavor the coating mix. Have some fun with it!
