Hot Chocolate

I seriously considered calling this “Evil Hot Chocolate” or “Seriously Serious Hot Chocolate”.  But then I figured most of you would be hooked at “chocolate”. : )
This is a very rich hot cocoa, and you can definitely add more milk if you want to tame it a bit.
I would make it as per the recipe, and you can always add more in the end if you’re not sure how rich you want it.  You can also use darker chocolate to make it deeper in flavor, or semi-sweet or milk for a more mellow flavor.
 
HOT CHOCOLATE
 
1 cup heavy cream
3 cups milk (any kind is fine, I use fat free)
8 oz. chocolate, chopped (or chips) Dark, bittersweet, semi-sweet, milk, or any combination
(I usually do half each dark and milk or all dark)
1 tsp vanilla
If using bar chocolate, just leave in wrapper and break in pieces.
Heat milk and cream in a pot over medium high heat until warmed.
Add chocolate and whisk until melted and incorporated well.
Stir in vanilla and serve with whipped cream.
This works well to make ahead and reheat as well.

Citrus punch

This is such a refreshing drink to serve for BBQs and parties but I think I love it just as much for holidays when everyone is eating lots and something light and refreshing just hits the spot.  Plus it is so simple!

CITRUS WATER PUNCH

1 T citric acid ( I found it locally at whole foods)
2 1/2 quarts water
1 cup sugar
2 T pure lemon extract
lemon, sliced
lime, sliced
orange, sliced
crushed ice
Stir together citric acid, water, sugar, and lemon extract in a large pitcher until sugar is dissolved. Add sliced fruit and crushed ice. Serve.

Rainbow Fizz

This is a fun and simple kid’s drink for St. Patrick’s day, (or a wednesday needing something fun).
Of course, be prepared for the adults to like it too. Most adults have memories of root beer floats when they were a kid, so it’s not a far stretch. And this can also be fun to do with say… vanilla ice cream and strawberry soda, or orange… just use your imagination!

RAINBOW FIZZ

Multi-colored sherbet
lemon-lime soda

Put a scoop or two of sherbet in the bottom of glasses, pour soda over the top.

Peanut Butter Chocolate Shake

I first found this recipe on http://www.everdayfoodstorage.net/ I adjusted the amounts a bit, and we like it without the banana as well.  This is one of my oldest daughter’s favorite treats (and we don’t mind it either!) Great food storage recipe as well.  We keep plenty of PB, nesquick, and dry milk around.

PB CHOCOLATE SHAKE

3/4 cup water
1/2 cup nonfat non-instant dry milk
1/3 cup Nesquick (or equivalent)
2 cups Ice
2 spoons peanut butter
1 banana (optional)

Layer in blender and blend until thoroughly mixed.

Frozen Hot Chocolate

This recipe has been all over the internet since “Serendipity” the restaurant in New York that invented finally released the recipe. We had it last night for New Year’s Eve. It’s kind of like a chocolate slushy. We used semi-sweet chocolate with good results but I bet dark chocolate would be even better.

FROZEN HOT CHOCOLATE
4 oz chocolate (that’s about 2/3 cup of chocolate chips)
2 tsp hot cocoa powder
1 1/2 T sugar
1 1/2 cups milk
3 cups ice cubes
whipped cream
chocolate shavings (optional)

Melt chcolate in microwave. Once melted, add hot cocoa powder and sugar.  Stir until thoroughly blended. Add 1/2 cup of the milk, stir till smooth.  Cool to room temperature.
In blender, place remaining 1 c milk, room-temp chocolate mixture, and ice. Blend on high speed until smooth. Makes about 4 servings (8 oz)

Pour in glasses and top with whipped cream and chocolate shavings.
